Sonic 1 for me. Simple yet challenging. I always felt the blue spheres were too easy. -

Sonic 2 halfpipe, though mostly because I have fond memories of playing Tails with my mother and we beat the game together, so that's probably why.
Blue spheres was also a lot of fun, but also extremely intense, haha.
Least favorite is probably the glowing spheres bonus stage from Sonic 3, because it just annoyed me - if this one counts. -

I got pretty good at that glowing sphere level but I was pretty terrible at it when I first got Sonic 3. -

for classic games I would have to agree that the half pipe is probably the best special stage; I feel like it's a good balance of easy to understand and challenge... ofc tails' AI lagging behind the player's inputs is the cause of a lot of failures for the stage but other than that I believe that it's fair
the half pipe is also used in quite a few sonic games; saturn 3D blast, and sonic rush have their own iterations of the half pipe for their special stages, and the concept is expanded upon in games like chaotix 32X and sonic heroes
although blue spheres is really fun I think sonic 1's rotating mazes will be my personal favourites, I enjoy "rolling ball puzzle" type games
